Jonathan Buckingham

General Manager

Jonathan is the most recent addition to the team at Vie, but has already been working with Chef Virant at his downtown endeavors as a manager at Perennial Virant restaurant and the J. Parker rooftop bar.

Originally from Old Lyme, CT, Jonathan began his restaurant career as a 15-year old; bussing tables and shucking oysters at the town’s staple seafood joint, Cherrystones. Evidently there was something about restaurants that struck his attention as he went on to earn his bachelor’s degree at Boston University’s School of Hospitality Administration.

After graduating, Jonathan took a break from the hospitality industry to serve as a Communications and Boarding Officer with the U.S. Navy in San Diego, CA. Upon his decommission in 2008, he jumped back into the hospitality industry with enrollment at the Culinary Institute of America in Hyde Park, NY. During his studies in the Hudson Valley he discovered a newfound passion for service and wine, and upon completion of the CIA’s program, he made the transition to the front of house official by accepting a management training position at the Tribeca Grill in Manhattan, NY. It was in New York that he completed the American Sommelier Association’s 6-month course in Viniculture and Viticulture. After 2 years in the Big Apple, Jonathan began to take interest in Chicago’s flourishing restaurant scene. As is often the case in the restaurant industry, multiple degrees of random separation were involved to put Jonathan in touch with Paul Virant, and after 2 years in the Windy City, he loves it and hasn’t looked back!

Julia Termanas

Office Manager

Julia Termanas serves as the office manager for Vie in Western Springs, Ill. She maintains and oversees the day to day functions of the restaurant and works closely with the culinary team and renowned chef Paul Virant.

A Chicagoland native, Julia discovered her interest in the restaurant industry at an early age and secured her first kitchen job at Vito & Nick’s Pizzeria when she was just 16 years old. She attended Moraine Valley Community College in Palos Hills, Ill. where she studied accounting, restaurant management and culinary arts. Prior to joining Vie in 2005, Julia worked at Courtright’s in Willow Springs, Ill. There, she split her time between restaurant office manager and server, further refining her fine dining management skills.

When Julia is not at Vie, she spends her time with her husband Jason two children, Kayla and Lily.

Pablo Moncada

Wine Director

Pablo was born oustide Santiago, Chile in a town called Rancagua then spent his formative years in Lund, Sweden. After moving to the states and attending college in Tampa, Fl, he moved to the place he finally calls home, Chicago.

Pablo achieved his Sommelier Diploma from the International Sommelier Guild in 2005 and says, “the restaurant world has always attracted me. I’m so happpy to be doing what I love.”

Vie is happy to have Pablo as part of our team.

Bill Anderson

Bar Manager

Arriving in Chicago after completing a BFA in Printmaking, Bill has had myriad jobs. He has done everything from canvassing for donations to factory press operation. Only after beginning as a part-time barback at Sepia in the West Loop did the world of cocktails open up to him. Soon, behind the bar shaking and stirring regularly, he realized the combination of people, drink, and food was a winning one.

“Before Chicago, I thought a beer and a shot was a cocktail! We don’t have cocktail bars in my hometown of Amherst, Ohio. Josh Pearson made me a classic, The Last Word, and I was in!”

Three years later, Bill is intent on bringing a bar program to Vie that not only reflects the seasonal, approachable style of the Chef Paul’s food, but one that will elevate the guests’ awareness of great spirits, beer, and mixed drinks.
