Brian grew up watching his Aunt Rita cook for every single holiday. Recruited to help out with minor tasks in her kitchen, he’s been hooked ever since. Brian’s first restaurant job was as a busboy at a local Italian restaurant in his hometown of Lemont. This eventually led to his picking up a few prep cook shifts during the week. After having the opportunity to work at a country club, Brian began working full-time as a prep cook while finishing up high school. He then enrolled at Joliet Junior College in 2009 and started applying the skills he learned from work at school, and the skills he learned from school at work, slowly learning each station. Brian graduated in 2012 with an associate’s degree in culinary arts. He joined Vie later in 2012 as the hot appetizer cook and worked his way up to sous chef in August 2014.
